Soak the bread in warm water with the lid closed, then squeeze well. Finely chop the onion and parsley and sauté in a frying pan in a little fat until soft. Add the prepared bread and steam, turning continuously, until the mixture hangs together like a dumpling without becoming crusty.

Mix the 3 bread dumplings, flour, meat, egg and spices in a baking bowl, i.e. knead by hand for about 10 minutes. The quantity should be cohesive and heartily seasoned at last.

Pour the meatloaf mixture into the baking dish lined with bacon slices, cover with bacon and place in the oven at 180 °C for about 40 minutes.

Our tip: Use a deliciously spicy bacon for a delicious touch!
