For the gingerbread spice, first release the cardamom seeds from the green capsules. Dry roast in a pan together with the cloves, allspice seeds, coriander seeds and star anise until fragrant.

Grind or blend into a fine powder with the remaining spices. Store the gingerbread spice in a tightly sealed jar until ready to use.
