For the arugula salad with ham, clean the arugula and lamb’s lettuce, rinse and drain well. Rinse tomatoes and cut in half. Rinse parsley, shake dry and chop.

Peel and chop garlic and shallots. Roast pine nuts without adding fat until golden brown, let cool.

Stir through vinegar, garlic, shallots and olive oil. Season to taste with salt, sugar and freshly ground pepper.

Carefully mix salad ingredients, drizzle marinade over. Spread ham evenly on top. Sprinkle parsley and pine nuts on top. Serve arugula salad with ham.
