Instructions:

For the coulered wild berries:

Bring red wine and port to a boil together (this will evaporate the alcohol). Add the preserving sugar, juice and zest of orange and lemon and bring to the boil again briefly. Then add the soaked gelatine leaves. Add the cleaned berries, stir gently with a wooden spoon, do not make more and pull off the heat after 2 to 3 min. Fill berries into glasses and put to cool.

For the clover cream:

Briefly boil the cream with the sugar and leave to cool for one night. Pour the cold cream into a mixing bowl, add the wild clover and the creamy Qimiq. Whisk for a few minutes.

Remove the berries from the refrigerator and serve with the clover cream.
