Preparation time about 20 min:

Separate the egg yolks from the whites. Whip egg whites until stiff, set aside to cool. Remove the peel from the ginger and finely dice. Clean apples and pears, remove core, cut into small slices, mix with raisins and a little bit of cinnamon sugar. Bring milk to a boil, add pudding powder and stir until smooth.

Mix flour with milk until smooth. Stir in egg yolks, sugar and almond liqueur as well, then stir in beaten egg whites in a leisurely manner. Heat a coated frying pan with clarified butter.

Fry raisins, pears, apple and ginger very briefly. Pour the batter over it, fry briefly, sprinkle with almond kernels.

Turn all together to the other side and roughly tear the Schmarrn with two forks.
