For the curd cheese and cream cake, first separate the eggs. Beat the egg whites until stiff, stir the yolks, powdered sugar, water until creamy. Mix flour with baking powder well and add to the mixture.

Carefully fold in the beaten egg whites and pour the mixture into a greased springform pan. Bake in the oven at 180 °C top/bottom heat for approx. 45 minutes. Remove the cake, let it cool and take it out of the springform pan.

For the cream, grate the lemon and squeeze out the juice. Whip the cream with the gelatine until stiff. Mix the powdered sugar, curd, lemon zest and lemon juice until creamy, then add the whipped cream. Cut the base 1x in half and spread the cream on top. Place the 2nd part on top and chill for about 3 hours.

Sprinkle the curd cheese and cream cake with powdered sugar.
