For the elderflower jelly, soak the gelatine in water, squeeze out. Heat the elderflower juice and dissolve the gelatine in it.

Allow this mixture to cool, but not to set. Wash the raspberries and let them dry.

Mix the sparkling wine with the elderflower juice and stir in the raspberries. When the mixture begins to set, spoon the mixture into decorative glasses.

Refrigerate the elderflower jelly for about 1 hour until it has set.
