For the egg dish, chop the ham, crack the eggs and mix lightly. Melt the butter in a non-stick frying pan.

Sauté ham briefly, empty eggs into it and allow to set a little. Reduce heat and from the edge pull the eggs into the center.

Swirl so that the still runny eggs can set again. Serve the egg dish on a warmed plate sprinkled with chives.
