A cake recipe for all foodies:
“Dough”: In a frying pan, melt the butter. Then add the hazelnuts, sugar, breadcrumbs and cinnamon and toast, stirring continuously with a slotted spoon, until lightly browned.
Line the bottom inside of a conical cake pan with parchment paper and grease with butter. Alternate layers of breadcrumb mixture and apple puree. Repeat this process 3 times, finishing with a layer of breadcrumb mixture. Spread butter flakes evenly on top. Bake at 190 °C for 25 minutes. Cool, dust with powdered sugar and serve lukewarm with vanilla sauce.
Vanilla sauce: Heat vanilla bean, milk, whipped cream and sugar together. Gradually add 3 yolks and beat to a rose. Pass the finished vanilla sauce through a fine sieve and cool.
Tips: You can also make this cake with 1/2 tsp liquid sweetener instead of sugar. Instead of butter flakes, you can also make dabs of sour whipped cream on the cake form.
