For the vegan apple pie, line a loaf pan with baking paper, peel the apples, cut them in half, core them and place them side by side in the pan with the curvature facing down.
Spread 1 tablespoon of lemon juice on the apple halves and preheat the oven to 180°C top/bottom heat. Melt the margarine in a saucepan, dissolve the sugar in it, add the cinnamon and pour over the apple halves.
Put all dry ingredients for the dough in a bowl and mix. Add the yogurt and vanilla flavoring and mix thoroughly. If the dough is too firm, add a little water. Carefully spread the batter over the apples and smooth it out.
Bake for 35-40 minutes until the surface is lightly browned. After baking, let cool briefly, turn out onto a plate and carefully peel off the baking paper. Sprinkle the vegan apple pie with powdered sugar before serving, if desired.
