For the cordon bleu pancakes, mix a pancake batter from flour, eggs, salt and milk. Put some oil in a pan and fry the pancakes (8 pieces).
Cover each pancake with 1 slice of ham and 1 slice of cheese, roll it up and fasten it with a roulade pin.
Coat the pancakes in flour, beaten egg and breadcrumbs and then fry them in deep fat or in a pan until crispy.
Drain the cordon bleu pancakes on kitchen paper and serve.
