For the Scampi-Gröstl, marinate the scampi with salt, pepper, lemon juice and olive oil (thaw if necessary).
Slice or dice the onion and fry well in a non-stick pan. Cut the potatoes into cubes or slices and sauté in the pan until cooked through. Add the onion and roast.
Later add the marinated (lemon juice & olive oil) scampi. Season with salt, pepper and fresh herbs.
Add 2 eggs or prepare as fried eggs. Serve the Scampi-Gröstl on marinated leaf salad.
