Stir the wild garlic with the feta cheese and the eggs, season with salt, pepper and nutmeg. For the pancakes, mix the flour with the eggs, milk and salt until smooth. Finish baking small pancakes in a frying pan with clarified butter, then cool a little.

Spread wild garlic cheese mixture evenly over pancakes, roll up and secure with toothpicks. Coat in flour, eggs and breadcrumbs and fry in floating fat.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
