Peel asparagus spears, remove woody parts well, boil in salt-sugar-vinegar water with a piece of butter for 12 to 18 minutes, depending on thickness and taste, and carefully lift out of the broth. Drain and keep warm. In the meantime, in a pan, lightly fry the ham cut into fine strips in a little melted butter, pour in the cream, bring to a boil and just below boiling point, add the egg yolks. Stir in grated cheese and continue to simmer gently, stirring constantly, until melted. Season sauce with salt, pepper and grated nutmeg. Place asparagus spears on a warmed serving platter and serve topped with ham cheese sauce. Serve with toasted slices of white bread.
