Soak the cicorino in lukewarm water if desired (see below). Cut into strips. Chop the onion and the parsley.

Let the butter melt. Add onions and cicorino and steam briefly. Stir the soup, creme fraiche and grain mustard and add. Let it boil once. Serve and sprinkle with parsley.

Goes well with pasta, lamb, long grain rice, pork, fish.

Put Cicarino rosso in warm water: Cicorino rosso, like white chicory, has a slightly bitter flavor that intensifies when you make it. If you want it more temperate, cut out the stem in a wedge shape and put the vegetable in water that is well lukewarm for ten minutes. By the way, you can do the same if you cook cicorino rosso or possibly chicory as a leaf salad.
