For the chanterelle minestrone, peel the onion, cut the vegetables into equal cubes, cut the bacon into small pieces. Clean the chanterelles well, pluck the larger ones into small pieces.

Heat some olive oil in a pot, fry the vegetables and the bacon. Shortly after, add the chanterelles and continue to sauté.

Drain and briefly rinse the beans. Add to the vegetables together with the herbs and the soup. Simmer on low heat until the vegetables are cooked tender. Season to taste with salt, pepper and lemon juice.

Garnish the chanterelle minestrone with chopped parsley and freshly grated Parmesan cheese.
