For the recipe Chinese Spare Ribs, mix the ingredients for the marinade and rub the meat with it. Marinate in a shallow dish in the refrigerator for several hours, preferably overnight.
Line a roasting pan with a large piece of aluminum foil. Pour in the spare ribs and marinade and baste with the hot clear soup, then bake in a heated oven at 240 °C for 1 hour.
Turn the spare ribs to the other side, lower the heat to 180 °C and bake again for 45 min until the meat is nicely browned and cooked through.
Remove the meat and arrange on a platter. If desired, pour the gravy into a small saucepan and stir to thicken with cornstarch to make a sauce.
