Try this delicious cake recipe:
Sift chestnut flour, add a little salt and the sugar, then mix with as much olive oil until a firm dough is formed.
Then add milk until the dough thickens. Add the pine nuts and raisins, sprinkle with fennel seeds, drizzle with a tiny bit of oil and bake on an oiled tray at 180 °C for about 45 min.
It becomes a crispy pancake that goes well with wine.
