Instructions:

A great pasta dish for any occasion:

Pour the flour into a suitable bowl. Beat the eggs and add them with the water and 1/2 tsp. salt. Stir everything together to form a firm dough. The consistency of the dough should not be too soft. Add a little bit of flour if necessary. Rest the dough with the lid closed for half an hour.

Grate the cheese. Cut the onion into rings.

In a large saucepan, boil enough water, 1 tbsp. salt and the oil.

Preheat the oven to 220 degrees, the hot air oven to 200 degrees. Grease a gratin dish with a little butter.

Press the dough in portions through the spatula sieve or plane into the water. As soon as the sparrows rise to the surface, lift them out of the water with a skimmer and drain.

Form the sparrows into the gratin dish. Sprinkle each layer with a little cheese. The top layer should be cheese.

Bake the sparrows on the middle rack of the oven for 10 minutes. In the meantime, toast the onion in the remaining butter until golden brown. Bring the sparrows to the table sprinkled with the onions.
