Instructions:

Crush dried chili peppers and coriander seeds in a mortar and mix with tamarind paste and hot water. Chop onions, garlic, turmeric, galangal and lemongrass stalk and mix well with the shrimp paste. Heat oil in a pan and fry everything together for 3 minutes. Then puree with the chili mixture in a hand blender and pass through a sieve. Chop the cashew nuts into small pieces, peel the pineapple and cut into small cubes. Bring coconut milk, spice mixture, cashew nut kernels and pineapple chunks to a boil. Season to taste with salt and sugar. Add shrimp and let steep for another 5 minutes. Arrange in bowls and serve.
