Skin the sausage and cut into narrow slices, Emmentaler into small lozenges. Rinse and clean the celery stalks and cut into slices. Finely chop some of the leafy greens, reserving a few leaves for garnish. Rinse, clean and dice the bell peppers.

Remove the peel from the shallots and garlic, chop finely. Stir through with salt, vinegar, sugar and pepper. Add the oil.

Rinse and chop the chives. Remove the shell from the egg and cut it into eighths.

Mix all ingredients loosely in a baking bowl. Mix with the marinade. Stir in chives and chopped celery greens. Garnish with egg quarters and celery leaves.

Our tip: Fresh chives are much more aromatic than dried ones!
