Soak the rolls in water or milk for a while, then squeeze and season with breadcrumbs and salt, pepper.

Leave to soak for about half an hour. Then form dumplings and boil in salted water. Strain and let cool.

When the dumplings are cool, wrap them with bacon and fry them in hot clarified butter until crispy.

Serve with red cabbage.
