For the bacon dumplings with buckwheat, cut the bread into cubes. Cut the bacon into small cubes. Wash the leek carefully, first cut into rings, then into small pieces. Finely chop the onion and parsley.

Whisk eggs and milk and season with salt, pepper and nutmeg. Pour the egg milk over the bread cubes and stir through.

Heat butter in a pan and fry the onions briefly. Add bacon cubes and fry well. Now fry the leek pieces as well. Pour the mixture over the bread mixture, add finely chopped parsley and mix well. Allow the bread mixture to stand for 20-30 minutes. Then form dumplings with wet hands.

Heat plenty of salted water and let the bacon dumplings with buckwheat steep for 20 minutes more than boiling.
