The recipe comes from Mecklenburg-Vorpommern, specifically from the island of Ruegen.

Rinse the fish fillets, acidify with juice of one lemon and sprinkle with salt. Marinate the fish for half an hour. Cut into pieces. Put in a frying pan oil form, heat slightly and put the pieces. Cover and cook over low heat for about 2 minutes until tender.

Stir flour with melted butter, add fish stock and let it boil. Stir egg yolk with sour cream, add salt, pepper and white wine and add everything to the sauce. Pour the sauce over the fish, sprinkle with breadcrumbs and cook in a hot oven for 15 minutes. Serve with long grain rice.
