For the Beef Salad with Apple, Beetle Beans and Celery, first cut the cooked beef into thin, bite-sized strips and place in a large bowl. Peel the onion and cut into fine strips. Wash and clean the bell bell pepper, green onion and celery and cut everything into fine strips. Coarsely grate the apple. Mix the cut vegetables, beetle beans and apple with the beef.
Prepare a dressing from apple juice, vinegar, oil, honey, mustard, salt and pepper in a cucumber jar (by shaking vigorously). Marinate the beef salad with it and mix well, let it stand for about 10 minutes.
