Buttermilk Mousse with Berries

Buttermilk mousse:



Soak the gelatine in cold water, squeeze it out and let it melt in a saucepan with 3 tbsp. buttermilk over low heat. Stir the remaining buttermilk with powdered sugar (if desired), vanilla and lemon zest. Fold in the gelatine.

Whip the whipped cream until stiff and fold into the buttermilk mixture. Chill in the refrigerator for about 2-3 hours.

Mash the strawberries with the powdered sugar and the juice of one lemon and pass through a sieve. Mix the strawberry puree with the raspberries.

Make dumplings from the mousse and serve with the berry mixture.
