Instructions:

1. the day before: Bring approx. 1 1/2 I water to the boil. Put in boiled beef, bring to boil, skim off foam. Add soup vegetables, spices, bouillon cubes and salt. Cook the boiled beef on the lowest heat for about 2 hours.

2. lift the boiled beef out of the clear soup, set aside. pour the clear soup through a sieve, cool. Set everything aside to cool with lid closed.

3. to serve: Remove fat from clear soup. heat clear soup, season, set aside about 1 quart for soup. Heat boiled beef in remaining clear soup, lift out, cut diagonally to grain into 1/2 cm thick slices. Arrange, garnish with horseradish. Pour a small amount of clear soup over.

Garnish: Carrot vegetables and roasted potatoes
