Beat eggs and whisk with mineral water, salt, pepper and nutmeg.

Melt the butter in a pan. As soon as the butter starts to bubble, pour the egg mixture into the pan and allow to set, stirring repeatedly and roughly “picking” the mixture.

Once the egg mixture has set, but is still slightly runny on the surface, remove from heat and allow to set in the pan for 1-2 minutes.

Sprinkle with chive rolls to taste, arrange and serve very fresh.
