Bacon Pancakes with Romanesco in Cheese Sauce

Mix 100 g of flour with part of the milk until smooth. Add the eggs, the rest of the milk and a little salt and stir well.

First sauté a little bacon in a frying pan with butter, add batter and finish baking golden brown pancakes.

Cut romanesco into small roses. In a saucepan, steam romanesco with a tiny bit of butter and a little vegetable soup until soft.

Melt 2 tbsp. butter, mix with flour and add the vegetable soup while stirring. Add milk and whipped cream and bring to a boil. Remove the saucepan from the stove, stir in the cheese and let it melt.

Season the sauce.

Arrange the Romanesco on the pancake and pour the cheese sauce over it.
