Peel the apples, remove the core and roast on a baking tray in the oven until soft. Then drive through a sieve and cool.

Whip the egg whites to egg whites and stir well together with sugar, vanilla sugar and kirsch with the apple puree (about half an hour).

Arrange the apple puree in champagne bowls and decorate with a berry or apple slice.
