For the Cloud Bread, separate the eggs and mix the yolks with the cream cheese, baking powder, cinnamon and sweetener, adding a small dash of water if necessary.

Beat the egg whites for several minutes until very stiff. Preheat the oven to 170 °C and carefully fold the beaten egg whites into the mixture.

Spread 6 blobs of the mixture on a baking paper and bake for 10-15 minutes until the bread is golden brown and the surface is slightly cracked.
