Instructions:

For the spinach pancakes, first preheat the oven to 50 °C. For the dough, whisk eggs, salt and 100 ml of the milk and mix with the flour until smooth. Stir in remaining milk.

For the sauce, mix yogurt, mayonnaise and garlic.

Bake thin pancakes from the dough in a little oil in a coated pan, keep warm in the oven.

For the filling, fry bacon and pine nuts. Add spinach, cover and let collapse, mix in parsley. Season filling with salt and pepper.

Cover half of spinach pancakes with filling, fold together, roll into stanitzels and serve with sauce.
