For the apple-prosecco jam, peel and core apples and cut into small pieces. Immediately sprinkle with lemon juice.

Puree with a hand blender, depending on whether you prefer it a little coarser with small pieces or very fine.

Heat in a saucepan with the Prosecco and stir in the preserving sugar. Boil according to the instructions on the package of the jelling sugar and then immediately pour into jars and seal.

Allow the apple prosecco jam to cool.
