Fine Strawberry Jam

For the strawberry jam, wash the strawberries and puree with a hand blender and pass through a coarse sieve. To remove the small strawberry seeds, pass the puree through a fine sieve again.

Scrape out the vanilla pod and add to the puree. Bring the strawberry puree to the boil, add the preserving sugar and prepare according to package directions. Rinse jam jars while hot and pour in jam while still hot.

Add about 1-2 tablespoons of vodka per jar to the surface of the jam and set on fire. Screw the lid on top. The heat will cause the lid to suck itself in and the jam will last longer.
