Place the blackberries, unthawed, in a suitable bowl. Lightly caramelize the sugar in a frying pan, add the vanilla sugar and boil with the juice of one lemon. Pour the white rum and heat until the sugar is completely combined with the rum. Pour the liquid over the blackberries while they are still warm and let everything sit together for at least 4-5 hours in a cool, dark place with the lid closed. Covered, the fruit will keep for at least 1-2 months. Cut the vanilla ice cream into eight cubes, arrange decoratively, cover with the “tipsy” blackberries, garnish with fan wafers and chocolate leaves, decorate with herb sprigs and bring to the table on the spot.
