For the apple dumplings, cut the apples into very small cubes. Put them in a bowl, pour the egg whisked with salt and sugar and mix well with the flour.
If the mixture is too soft, add a little more flour. Leave the mixture to stand for 1/4 hour and form dumplings (12-14 pieces).
Boil them in salted water for 10 minutes. Put the dumplings in a wide sieve to drain. Roll in lightly roasted breadcrumbs and serve the apple dumplings sprinkled with sugar.
