Heat butter fat in a deep frying pan. Add garlic, onions, coriander, cumin, ginger, sakz, cinnamon, cloves and do gently for 3 min. Add minced meat, mix well and make another 30 min on a little bigger flame, stirring frequently. If there is still liquid after this time, it must be drained completely.

Sift the flour into a suitable bowl, melt the butter for the dough and add it, finally pour in the yogurt, season with salt and knead the dough well. If the dough becomes too firm, add a little buttermilk or water. Leave to rest for half an hour, then knead again until the dough is smooth. Take a piece the size of a walnut and roll it out (as thick as a 5-mark piece). Remove additional pieces and roll out.

Meanwhile, heat the oil in a deep frying pan. On the rolled out pieces of dough form a little bit of the meat mixture, fold the dough in half and stick the edges firmly with cold water.

Bake the cakes in hot oil until golden brown. Next drain and bring to table while still hot.
