Remove the peel from the ginger root and grate it on a fine grater. Place in a frying pan with the juice of one lemon, pear syrup, cinnamon stalks and a third of the apple juice. Bring to the boil and gently simmer for 10 minutes.

Strain and pour back into the roasting pan.

Peel apples and pears, cut into quarters, remove core, cut into slices, then into slices. Cook in apple juice for a few minutes until soft, cool and mix with remaining apple juice and cider. Bring to the table in a cool place.
