Boil the apple juice (1) with the bay leaf spice, cloves and nutmeg (freshly grated), simmer the pear slices in it for 10 to 15 minutes – or until just soft – on a low flame.
Pour the cooled slices into a large bowl, together with the ginger, the compote juice, the apple juice (2) and the juice of one lemon. Marinate for 6 to 10 hours.
Top up with apple juice (3) and mineral water and serve immediately.
