Peel ginger root, cut into fine slices, then into fine strips. Finely grate half of the orange peel, thinly chop the other half (without the white skin), then cut into strips. Finely grate the lemon peel. Put all these ingredients in a frying pan with the orange juice, the juice of one lemon, the spices and the pear syrup and let it bubble. Cover and simmer gently for five minutes.

In the meantime, cut the apples in half without peeling, remove the core. Cut apple half into slices, place in a large enough bowl with currants. Pour the hot juice over the apples, marinate for at least 30 min. turning occasionally. Serve cold.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
