For the lemon rice with pine nuts, first preheat the oven to 180°C degrees and wash the rice. Fry the onions in a pot with 20 g butter until golden brown. Add the rice and cook for about 5 minutes, stirring constantly, until it gets some color.

Pour in the soup and add the lemon zest. Season with thyme, salt and pepper. Cover and cook the rice for about 15 to 20 minutes, until the liquid is absorbed and the rice is firm to the bite.

Stir in the lemon juice and remove the lemon zest. Melt the remaining butter in a skillet and brown the pine nuts. Before serving, mix the pine nuts into the lemon rice with pine nuts.
