For the sesame flaxseed buns, mix whole rye flour, wheat flour and lukewarm water and allow to swell for 5 hours before baking. Knead all ingredients together well.
Let the dough rise in a dough bowl until doubled in size. Then shape the dough with wet hands into thin strands and twist like a snail shell, place on a baking sheet, sprinkle with flax seeds and sesame seeds and sprinkle with water.
Preheat oven to 240 °C, in the meantime let the snails rise again (about 1/2 hour). Before baking, spray again with water.
Bake the snails for 15 minutes at 240 °C, turn off the oven and bake for another 20 minutes.
