Cut apples into wedges, banana into slices, sprinkle with the juice of one lemon. Cut oranges into pieces. Divide fruit evenly among four plates.

For the sauce, whip egg whites until stiff, sift in sugar. Vanilla bean. Scrape out, stir through with yogurt and egg yolks. Whip cream until stiff, fold in egg whites. Add to the fruit form.
