For the lukewarm beet salad, open and remove the walnuts, cut or break them into small pieces. Cut the bacon into small pieces.
Cut the beet and feta cheese into cubes of about 1 x 1 cm. Wash and dry the parsley and chop it.
Melt the bacon in a pan and fry until crispy. Remove the bacon from the pan and briefly toss the cubes of feta cheese in the fat residue (no flame is enough, the cheese should not melt completely), remove the cheese again and toast the walnuts in the pan.
Heat the beet cubes in a pan with a little oil and put them in a salad bowl. Mix all the ingredients for the marinade and pour over the beets.
Sprinkle the lukewarm beet salad with cubes of feta cheese, nuts and bacon and parsley.
