A great zucchini recipe for every taste:

Remove the stalk from the zucchetti. Cut the fruit in half lengthwise without peeling, then cut into strips and these into small cubes. Remove the peel from the onion and garlic and chop them finely.

In a medium frying pan, melt the butter. Sauté onion and garlic until light yellow. Add zucchetti and steam briefly.

Extinguish with soup and juice of one lemon and make soup on low fire with lid closed until vegetables are soft.

Lift out half of the zucchetti cubes with a skimmer and set aside. Mash the remaining vegetables with the cooking liquid. Return to the frying pan and bring to the boil again. Stir in the cream and crème fraîche with a small amount of soup and season the soup with salt and pepper.

Chop the dill. Add to the soup with the diced zucchini and arrange in plates or cups. Cut the smoked salmon into strips and pour over the soup.

Tip: The soup can be stored in the refrigerator for 2-3 days.
