Instructions:

A great pasta dish for any occasion:

Mise-en-place :

Rinse the zucchinis , cut lengthwise into 5mm slices , please watch your fingers , machine works best.

cut the salmon into thin slices, about twice as thick as for smoked salmon.

chop the onion, chop the chives and the mozzarella as well.

blanch the zucchini slices briefly in salted water, must still be crisp and drain well.

butter a sauté pan, add the onions and carrots, spread the salmon evenly on top, pour the white wine over it and put it on the fire, as soon as the salmon turns light pink, remove the salmon and the carrots/onions, add the fischabatis (fish bones and stuff like that) and bring to the boil once, skim, strain the stock and boil to half, add the martini or niolly prat, boil to half.

In the meantime, butter an oven dish and fill it alternately with zucchini, mozzarella and salmon.

Add the cream to the sauce and cook again until a thick sauce remains (the zucchini form again water from 8! ) the sauce over the lasagna form, the ger. Cheese on top and bake for 25 min. at 200 C in the stove.
