For the walnut bend first prepare the dough. For the dough, boil the potatoes, peel them while still hot and press them into a bowl with a potato press, add the butter and let them cool down a bit.

Knead the mashed potatoes with semolina, salt, egg, sugar and flour to a firm dough. (add a little more flour if necessary).

For the filling, boil honey with milk and stir in the nuts and cinnamon. Roll out the dough round and cut into cake pieces, roll these triangles with filling into croissants and bake in the preheated oven at 180 degrees for about 20 minutes until golden brown.

Let the walnut croissants cool down afterwards.
