Separate eggs. Beat egg whites until very stiff. Stir cottage cheese with flour, egg yolks and salt. Gently mix in the snow.
Heat a little butter in a cast iron or non-stick frying pan. Pour a small ladle of batter into the frying pan. Toast pancakes until crispy brown on both sides.
Serve with delicious blueberries or raspberries for a sweet main dish.
