Instructions:

A great pasta dish for any occasion:

1. heat oil in a large saucepan and sauté onion, carrot and white beet for 3-4 min. add clear soup, bring to a boil, cover and simmer gently for 20 min.

In the meantime, place the couscous in a large enough bowl and pour a small amount of boiling water over it. Stir until the grains have swelled and separated.

3. add zucchini, tomatoes, peppers and bean pods to the saucepan.

4. add lemon zest and turmeric, if using, to the couscous form and mix well. Form couscous into a steamer and place on top of the cooking pot with the vegetables. Simmer vegetables on low heat so that couscous is steamed in about 8- 10 min.

Arrange couscous on heated serving plates. Vegetables and a little liquid over it form. Sprinkle with cilantro or parsley and bring to table garnished with parsley sprigs on the spot.

Couscous is made from coarse semolina and is quick and easy to prepare. It is a welcome change from long-grain rice and pasta.
