For the lentil couscous salad, wash and rinse the lentils thoroughly. Roughly grate the carrot, dice the bell bell pepper and tomatoes. Heat vegetable soup and simmer lentils and carrot for 10 minutes.

Turn off heat. Sprinkle in couscous, cover and let swell for 10 minutes. Let cool, mix with cashews, peppers and tomatoes and season with salt.

Sprinkle with parsley.
